Chicken Salad

This with a splash of simple vinaigrette and ground peppercorns on top. I could have called this tomato salad with chicken since these rich red tomatoes were just as prominent. These skinless chicken breasts added very lean protein but were still very juicy and not dry.

Chicken with Leeks & Mushrooms

The pictures don't do this simple meal any justice. The french fries do not even really belong. The butter fried leeks and thick cut mushrooms smothering these chicken breasts were to die for.
