Leftover Beef Patty & Quick Potato Salad

A huge patty made with some leftover hamburger cut in two and served with a quickly whipped up potato salad. This is more then enough for a Friday night. A couple of snacks and a drink or two and the calories will be right up to normal.

Beef with Tomato Sauce & Rice

To be honest I'm not sure what you'd call this. It's like a beef stroganoff but with other ingredients and tomato sauce instead of sour cream. It's also over a bed of rice instead of noodles. Whatever it was it was great and since I was being so honest in that first sentence you can and should trust me on this!
